Oriente
With an inspiring sunrise view overlooking the extensive Reflections Pool, enjoy our sumptuous breakfast buffet each morning with a complement of fresh juices, healthy cereals and yogurts, and a variety of breads, cheese and cold cuts, Asian selections, and hot dishes to wake up to.
In the evenings, treat your palate to a modern Mexican menu in a class of its own. Each dish pays homage to the highest quality Mexican ingredients while also presenting a wide array of popular dishes. The elegant selection of starters include a delicate scallop ceviche in a tango with fresh mango sauce, while a rich ayocote bean cappuccino receives a shot of crispy red rice powder along with a skewer of grilled lobster. Mains receive equal care, in the form of a braised short rib that melts in your mouth accompanied by Mexico's famous mole - a chocolate bean stew, sautéed plaintain, soft poblano polenta and huazontle - a delicious green Mayan flower tip that resembles a tangy, miniature broccoli.

Saffron
Banyan Tree's signature restaurant serves contemporary Thai cuisine, prepared specially by our expatriate chefs from Phuket, Thailand. Overlooking the lobby, lagoon and the mangroves, the restaurant's three over-water decks provide an intimate romantic setting that caters to special occasions.
Traditional Thai cooking techniques are preserved in dishes such as the evergreen tom yum goong - a sour and spicy lemongrass soup with juicy prawns; as well as pad Thai - flat rice noodles stir-fried with a balance of tamarind paste, fish sauce, chili, and more. Discover sauces that you never knew existed - hot basil, black-pepper garlic, mango-sweet chili jam. Open your tastebuds to yet more flavours in the grilled jumbo prawns accentuated by five-flavour tamarind sauce and star fruit salad, or indulge in a well deserved dessert of flamed mango with black sesame ice cream as well as a coconut crème brulee with ginger syrup.

Set in the tranquil surroundings of the Banyan Tree Spa, dining at Tamarind is an experience not to be missed. Fresh ingredients, exotic herbs, roots, spices and aromatic salts create the distinctive flavors of Tamarind´s hearty eclectic cuisine.
Our Mediterranean-inspired dishes are sophisticated in its execution, from the classic pairing of watermelon and goat cheese, to the finely tuned risotto with duck confit. For mains, choose del mar (from the sea) such as the main lobster served with olive oil powder, or de la tierra (from the land) and revel in a grilled Kobe fillet simply garnished with wild mushroom bread.

Set at the poolside and beachfront overlooking the Caribbean Sea, this perfect spot offers sophisticated bites and favourite cocktails all day.
There's something for every taste bud, though gourmands would naturally enjoy the grouper ceviche with sweet potato and manzano chili; crispy tempura battered shrimp tacos; and a sweet ending of mojito, champagne, or piña colada sorbet. In addition, this is the place to go if you need a wide variety of finger food, salads, sandwiches and a good chocolate brownie or New York cheesecake, all enjoyed in the proximity of incomparable beach views.

Reflections Pool Bar
Lounge in comfort by Banyan Tree's signature heated pool during winter season, a free-form favorite located close by Oriente and the main lobby. La Copa
Toast to good memories with classic as well as innovative new cocktails that are perfect to pair with your vacation. A Kobatini infuses vodka and late harvest wine with peach liquor, shaken and served with a Champagne float; while a Spa Cocktail is a refreshing thirst quencher prepared from citrus vodka, fresh cucumber and lime. Even more delightful is the Riviera Lemonade, a twist made from fresh blackberries, vodka and homemade lemonade.
Just as interesting are the tapas plates, which are ideal for sharing. From asparagus tempura to mezze, the selection is international and delicious. After dinner, La Copa is the perfect place to unwind and offers the best setting for star gazing while you linger over a coffee, cognac and cigar.

Ixchel
Every couple should experience the romance of Banyan Tree's drifting dinner. Step aboard the "Ixchel - Godess of the Moon", Banyan Tree´s unique and traditional dining trajinera.
Against the backdrop of the Mayakoba lagoon, you and your partner will experience the delectable cuisine prepared from one of our culinary hosts. The evening will be brought to a climax as the sun sets over your lagoon tour and dusk paves the way for a night full of promises.
The Ixchel departs from the main lobby at 5:30pm, depending on availability. Dinner lasts approximately two-and-a-half hours, for up to four diners only. Kindly make your reservation a minimum of 24 hours prior to departure time.
